   Title: “QUICKIE MIX” ORANGE RAISIN COFFEE CAKE

   COFFEE CAKE-------------------------------- 2 c “Quickie Mix” (see recipe)

   Grease and lightly flour an 8x8x2-inch baking pan. Preheat oven to 375~F.

   Combine the 1/4 cup sugar, flour, cinnamon, and 2 tbsp. margarine in a small bowl until mixture is crumbly; reserve.

   Combine “Quickie Mix”, 1/3 cup sugar and orange rind in a large bow; work to remaining 2 tbsp. margarine with pastry blender until crumbly; stir in raisin and nuts.

   Mix water with egg; add to “Quickie Mix” stirring just to combine; turn onto prepared pan; sprinkle with reserved topping.

   Bake in a preheated moderate oven 375~ for 25 minutes. Sprinkle with confectioner’s sugar, if you wish. Serve Warm. Yield: 8 servings.
