• 1.0 cup Regular Pancake Mix
• 1.0 T Sugar
• 1.0 T Ground Cinnamon
• 1.0 Egg

   In bowl, mix pancake mix, sugar and cinnamon. Add egg, milk, 1/3 c. applesauce and 1 T. oil. Beat with a whisk until fairly smooth; some lumps will remain. Brush a preheated griddle with oil. Using 1/4 c. batter for each pancake, cook on griddle until underside is golden brown and surface is bubbly. Turn and cook until other side is golden brown. Top with applesauce and cinnamon sugar, if desired. Makes 8 pancakes.
