Bavarois 02

Method (preview)

   Add crushed strawberries.

   Chill until mixture begins to jell.

   Cook sugar and 2 tablespoons water in a small heavy saucepan until a few drops form a soft ball in cold water.

   Remove from heat and gradually add to egg whites, beating constantly.

   Continue beating gently until cool.

   Combine egg white mixture and strawberry mixture and turn into a 1 1/2 quart mold.

   Chill until set.

   To serve, unmold on a platter and surround with a garnish of strawberries.
