  1. 1

Put the butter into a 10" - 12" frying pan.

  2. 2

Melt over moderate heat, and allow to brown slightly.

  3. 3

Add the brown, sugar, stir to mix, and bring to a boil, stirring occasionally.

  4. 4

After bubbles form all over the surface, continue boiling for 3 minutes, stirring occasionally.

  5. 5

Add the boiling water VERY gradually to the brown sugar mixture, whisking it in well.

  6. 6

Be careful, the mixture will boil up furiously and give off lots of steam.

  7. 7

If there are any lumps left, stir over moderate heat until they're dissolved.

  8. 8

    Remove mixture from heat.

  9. 9

Sift together flour, cornstarch, and salt into a fairly large saucepan.

  10. 10

    Gradually stir in the milk.

  11. 11

If there are lumps, press on them with a rubber spatula to dissolve.

  12. 12

When the mixture is smooth, stir in the brown sugar mixture.

  13. 13

Place over medium-low heat and cook, stirring constantly, until mixture comes to a boil. Let boil for 1 minute.

  14. 14

    Remove from heat.

  15. 15

Beat egg yolks lightly in a bowl and add a few spoonfuls of the pudding mixture.

  16. 16

Beat in a few more spoonfuls, then pour the rest of the yolk mixture into the pudding mixture and stir well.

  17. 17

Place over low heat and cook, stirring, until it comes to a low boil. Allow to boil for 1 minute.

  18. 18

Remove from heat, stir in the vanilla.

  19. 19

Pour into a mixing bowl, then stir occasionally and gently till cool.

  20. 20

Don't overdo the stirring or you'll thin the mixture.
