Cantaloupe 01

Method (preview)

   Peel, seed and dice the melon.

   In a medium saucepan mix half the sugar with the melon and cook until the melon is tender and soft.

   Mash the melon.

   Mix the flour with the remaining sugar, add the beaten egg yolks and butter.

   Mix in the mashed melon.

   Pour into the pastry case and cover with meringue made from the egg whites.

   Brown the meringue in the oven. Cool the pie before serving.
