Clean and pat dry chicken breasts. Brush chicken with adobo sauce then season with both sea salt and cracked black pepper to taste.
- 2
Boil pasta according to directions on package. Prepare remaining ingredients.
- 3
Place a large skillet on stovetop over medium heat.
- 4
Add 1/4-cup olive oil and let warm until it begins to shimmer.
- 5
Add chicken breasts to pan, lightly frying for about 6 minutes on each side or longer depending on thickness.
- 6
Once chicken breasts are cooked through, transfer from a pan to a plate and tent with aluminum foil to keep warm.
- 7
Immediately add diced yellow onions and fry for 2 to 3 minutes.
- 8
To the onions, add the next three ingredients and cook for an additional 5 minutes.
- 9
Reduce heat to simmer and add cooked, drained pasta, tossing to coat with the vegetable and bean mixture.
- 10
Remove from heat, toss with cilantro leaves and cotija cheese.
- 11
Divide pasta between 4 plates or place on a good-sized serving platter and top with chicken breasts.
- 12
Serve hot or chilled.
- 13
If serving cold, slice the cooked chicken breasts after they have properly chilled and re-toss the pasta prior to serving.
- 14
Sprinkle a small amount of fresh cilantro across the top for a garnish.
