Cinnamon 01

A home-style Cinnamon 01 made with Bicarbonate Of Soda, Ground Cinnamon, Lemon Juice, Orange Juice, and Caster Sugar. Save it, add the ingredients to your shopping list, and cook it tonight.

Method (preview)

   Sift the flour, soda and 1/2 teaspoon of the cinnamon into a bowl.

   Rub in the butter, then stir in the brown sugar.

   Add the juices, egg yolk and enough of the egg white to make a dough.

   Roll out the dough thinly and cut into 5cm/2" rounds.

   Place on greased baking sheets.

   Brush with the rest of the egg white, lightly beaten.

   Mix the white sugar with the remaining cinnamon and sprinkle on top.

   Bake in a preheated moderately hot oven (190C/375F/GM5) for 15 to 20 mins.
