Colada Upsidedown 02

Ingredients

• 2/3 cup

• 3/4 cup
• 1/3 cup

Method (preview)

   Combine pineapple, butter, sugar, rum and vanilla. Pour into the bottom of a 9x9 inch baking dish.

   Combine flour, sugar, baking powder, salt and coconut. Add milk, egg, butter and vanilla.

   Beat with an electric mixer for a minute or two until smooth.

   Pour the batter evenly over the pineapple mixture and bake at 350 degrees

   F for about 40 minutes or until a toothpick inserted into the center comes out clean. Serve with ice cream or sweetened whipped cream.
