Ingredients
- 1/2 cup
- 1 tsp
- 1/2 tsp
- 1 tsp
- 2 clove
Method (preview)
- 1
Blanch salt pork: place in pan, cover with cold water and bring to boil.
- 2
Drain and cut as directed.
- 3
In 3-qt. casserole, cook pork until golden.
- 4
Remove rind.
- 5
Add onions, and cook until they begin to brown.
- 6
Remove and set aside.
- 7
Mix flour, salt and pepper in large bowl.
- 8
Roll chicken pieces until well coated.
- 9
Place in casserole and, over high heat, brown each piece.
- 10
Turn with kitchen tongs.
- 11
Skim off excess fat.
- 12
Warm brandy in small pan, spill over chicken, ignite and let flame burn out. Pour in wine.
- 13
Add sugar, garlic, mushrooms, celery tops (leave these as whole as possible so they're easy to remove), rosemary, thyme, parsley, and bay.
- 14
Cover and simmer over low for 40 minutes or until chicken tests tender.
- 15
May also be cooked in the oven.
- 16
Cover and cook 1 hour at 350.
- 17
When done, the sauce should be about the consistency of a thin white sauce.
- 18
If it's too thick, remove the chicken and veggies and boil it down to desired consistency.
- 19
Choose a casserole that is just large enough.
- 20
If it's too large, extra wine will be needed to cover the food and it will come out boiled rather than simmered.
