- 1
In a large bowl, mix the soy sauce with half each of the garlic, the ginger and the crushed red pepper flakes.
- 2
Add the chicken and toss well to coat.
- 3
In a large, deep, nonstick skillet over medium-high heat, add the oil.
- 4
After a minute or so, when the oil is hot, remove the chicken from its marinade (discarding any excess marinade) and add it, skin side down, to the skillet.
- 5
Brown it well on both sides, rotating and turning the pieces as necessary, about 10 minutes (the soy sauce will help it brown faster than usual).
- 6
Reduce the heat to medium and continue to cook, turning as necessary, about 15 to 20 minutes or until the chicken is cooked through, transferring the pieces to a plate as they finish cooking.
- 7
Or proceed to the next step.
- 8
Reduce the heat to low and add the sugar and the remaining garlic, ginger and crushed red pepper flakes to the skillet, along with the water.
- 9
Increase the heat to medium and cook, stirring occasionally, until the sugar melts and the sauce thickens and becomes foamy, about 5 minutes.
- 10
Add the nam pla and any juices that have accumulated around the chicken.
- 11
Cook for another minute, then return the chicken to the pan and cook, turning the pieces in the sauce a few times until they are nicely glazed and the chicken is hot.
- 12
Transfer to individual plates and spoon the sauce on top, garnish with cilantro and serve.
