A home-style Italian 03 made with Mascarpone Or Cream Cheese, Part Skim Ricotta Cheese, Sugar, and Vanilla. Scale it up or down for the number of people at the table.

Method (preview)

   Cream the cheeses together, add egg yolks, syugar, cognac and vanilla.

   Pour into prepared pie crusts.

   Bake at 375 F for 30 minutes or until tester inserted in center comes out clean.
