Method (preview)
- 1
In a heavy saucepan large enough to hold all ingredients (pasta and sauce), heat bacon fat over medium high heat until shimmering.
- 2
Whisk in flour, stir until dark golden and aromatic. Remove pan from heat. Whisking constantly, pour in milk slowly.
- 3
Return to medium low heat and bring to a boil, whisking constantly.
- 4
Lower heat to low.
- 5
Add salt, pepper, nutmeg, oregano, comino and adobo seasoning.
- 6
Stir to combine.
- 7
Let simmer, whisking occasionally, for about 5 minutes.
- 8
Sauce will continue to thicken.
- 9
Taste and correct any seasonings. Sauce should noticeably undersalted at this point - cheese will add remaining salt to the sauce.
- 10
Cut up all cheeses into 1/2 inch pieces. Add all at once, stirring occasionally. Allow cheese to melt slowly - do not burn.
- 11
Once all cheese has incorporated into sauce, add crema and stir to incorporate. Taste and correct for seasonings
- 12
Bring a pot of salted, oiled water to the boil.
- 13
Add pasta to boiling water, stir to prevent sticking and boil for 6 minutes.
- 14
Test a piece - it should be quite al dente.
- 15
Drain and pour all pasta into ice bath to stop cooking process.
- 16
Drain pasta, and put back into original cooking pot.
- 17
Add cheese sauce to pasta and combine, making sure sauce gets incorporated into macaroni.
- 18
Transfer pasta/cheese sauce mixture to a 3 1/2 qt baking dish.
- 19
Sprinkle bacon/breadcrumb mixture over the top, covering all pasta/cheese sauce.
- 20
Bake at 400F for about 20 minutes until cheese is bubbling up and topping is toasted.
