- 1
Use a small knife to cut round the root and growing shoot of the onion in a small, pointed plug shape.
- 2
Remove the skin, cut in half from root to shoot and slice very thinly in half moons.
- 3
Heat the oil in a large, heavy-bottomed frying pan or similarly wide-based pan placed over a medium heat.
- 4
Stir the onions into the hot oil, stirring frequently, until they begin to wilt.
- 5
Reduce the heat after 5 or 6 minutes, season the onions with 2.
- 6
5g / 1/2 tsp salt and cook for a further 10 minutes until the onions are floppy and juicy.
- 7
Add the sultanas and the sugar, season with black pepper and cook until the onions are sticky and slippery and the sultanas are beginning to plump.
- 8
Transfer the onion mixture to a small, heavy-bottomed stainless steel pan and add the wine and vinegar.
- 9
Bring to the boil, stirring a couple of times, then reduce the heat so the stew simmers very, very gently and leave to cook for about 30 minutes.
- 10
The result you are after is thick, juicy and jam-like.
- 11
Allow to cool.
