Classic Strained Passionfruit Juice Passionfruit Cake

• 1/4 cup

• 125 g
• 3/4 cup
• 3/4 cup

Method (preview)

   Mix juices, fruit, sugar and butter in saucepan and stir over low heat until sugar is dissolved.

   Simmer uncovered 3 min. Cool in large bowl.

   Bake in lined 20cm cake tin 1 1/2 hours in moderately slow (say 165 C) oven. Cool in pan. Keeps 1 week.

   If you want something simpler, just make a standard butter pound cake or madiera cake and add the pulp of about four passionfruit to replace the liquid.
