  1. 1

Peel peaches then halve and pit.

  2. 2

Scoop out and discard dark flesh from pit area.

  3. 3

    Cut each half into wedges.

  4. 4

Toss with sugar and let stand for 30 minutes.

  5. 5

Drain in colander set over a bowl.

  6. 6

Whisk 1/4 cup of the juice (discard the rest) with coarnstarch, lemon juice and salt.

  7. 7

Toss peach juice mixture with peach weges and transfer to an 8-inch-square pyrex baking dish.

  8. 8

Bake until peaches begin to bubble, about 10 minutes.

  9. 9

While peaches are baking, process flour, 3 tablespoons sugar, baking powder and soda and salt in food processor until combined.

  10. 10

Add butter and process until mixture resembles coarse crumbs, about 10 1-second bursts.

  11. 11

Transfer to a bowl, add yogurt and stir until a dough is formed (don't overmix).

  12. 12

Break dough into 6 evenly sized mounds and set aside.

  13. 13

After peaches have baked 10 minutes, remove from oven and place dough mounds on top, spacing at least 1/2-inch apart.

  14. 14

Sprinkle each with some of the remaining 1 teaspoon sugar.

  15. 15

Bake until topping is golden brown and fruit is bubbling, 16 to 18 minutes.

  16. 16

Cool for about 20 minutes before serving.
