When fully dissolved put aside in a warm place for approx. 10 minutes until the mixture has started to froth.
- 2
Put the flour and salt into a bowl and add the yeast mixture when it is ready, also add the oil and warm water and combine into a moist but firm dough.
- 3
When it is a dough, turn out onto a floured surface and gently knead.

When done place in a clean, floured bowl, place a damp cloth over and set aside to rise for an hour and a half to two hours until doubled in size.
- 5
Whilst the dough is rising fry the onions and about 3 cloves of garlic in a little butter and olive oil, until the onions are soft and golden.
- 6
Once ready put aside.
- 7
Also boil the potato slices for approximately 4 minutes or until semi-cooked, then drain and put in cold water.
- 8
When the dough has risen, knock it back and lightly knead until springy, spread out on a baking sheet into approximately 10 inch square.
- 9
Spread the onions and garlic over the base, place some rosemary on the onions, then place the potato slices in a single layer over the onions.
- 10
Add more sprigs of rosemary, olives and quarters of garlic.
- 11
Also place the cheese over, then sprinkle with olive oil, season.

Bake for 30 minutes and serve hot.
