Method (preview)

   Put the petals, water, lemon juice and sugar into a large saucepan and heat gently until the sugar is dissolved.

   Bring to a boil, then cover and simmer gently for 30 mins.

   Add the pectin and rosewater, stir well, then boil hard for 5 mins.

   Test for a set, if not ready, test again in 2 mins.

   Keep testing until a set is reached.

   Cool slightly, then pour into warmed, sterilized jars.

   Cover and seal when completely cold.
