Taco Filling 02

Taco Filling 02 comes together with Olive Oil, Garlic Minced, Green Pepper Chopped, and Tomato Juice. Scale it up or down for the number of people at the table.

Ingredients

Method (preview)

   3 tablespoons taco seasoning mix In a large skillet, heat oil over medium heat.

   Saute onion, garlic, and green pepper until tender.

   Add bulgur.

   Saute 1 minute, stirring well.

   Stir in salsa, 1 cup of tomato juice, and taco seasoning.

   Cook for 10-15 minutes until mixture is sligh tly chewy, adding more tomato juice if necessary.

   Enchiladas: Fill flour tortillas with Mexican Filling and cheese and refried beans, if desired.

   Roll up, place seam side down in shallow baking dish, top with cheese and enchilada sauce or salsa, and bake at 350 degrees F for about 20 minutes.
