Tofu Cheesecake 04

Tofu Cheesecake 04 is built on Cinnamon, Sugar, Lemon Juice, and Vanilla. Scale it up or down for the number of people at the table.

Ingredients

• 1/4 tsp
• 1 cup
• 3 tbsp
• 3 tsp
• 8 tbsp

Method (preview)

   Put in mixing bowl and stir in syrup and extract until moistened.

   Press mixture evenly into bottom of a 9" springform pan. Bake 5 minutes at 350 degrees. Cool.

   Blend all filling ingredients in food processor until very smooth.

   Spread evenly over crust in pan and bake in 350-degree oven until lightly browned, about 30 minutes.

   Cool on rack.

   Refrigerate and chill until firm.

   Place on a large plate, run knife around edge of pan, and then release sides of springform pan.

   Store in refrigerator.
