   Cardamom is widely used in Scandinavian, Indian, and Arab cuisines. It is an essential ingredient in dishes as diverse as Indian curry and Swedish meatballs and breads. The Arabs make coffee from cardamom, a drink they consider a symbol of hospitality. the tiny seeds are sold whole or ground. Cardamom pods are also available, dried or green. They are quite small, containing only a dozen or fewer seeds. Cardamom is the third most costly spice - after saffron and vanilla.
