   Cloves are the buds of the furled flowers of an evergreen tree and as such are the most important flower spice. They have a sweet, pungent flavor and are used whole to stud ham and pork, and also added to pickles, chutneys, sauces, and vegetable dishes. Ground cloves are used in baked goods.
