- 1
Heat an ovenproof frying pan over a high heat.
- 2
Add the salmon, skin-side down first, and fry for 1-2 minutes, or until the skin is crisp.
- 3
Turn the salmon over and fry for 30 seconds to one minute to sear the fish.
- 4
Turn it over again so it is laying skin-side down and transfer the pan to the oven for 7-8 minutes to roast the salmon.
- 5
For the sweet and sour peppers, heat the oil in a separate non-reactive frying pan over a medium heat.
- 6
Add the pepper pieces and fry for 2-3 minutes, or until they start to soften.
- 7
Add the red wine vinegar and sugar and continue to cook for 5-6 minutes, or until the peppers are soft and the vinegar has reduced.
- 8
To serve, scatter the mixed leaves onto a serving plate, and place the crisp roasted salmon on top.
- 9
Arrange the peppers around the edge of the plate.
- 10
Drizzle the dish with balsamic vinegar.
