Djedj b'l-qasbour / African Coriander Chicken
Djedj b'l-qasbour / African Coriander Chicken comes together with Chicken, Butter, Olive Oil, Turmeric Or Saffron, and Salt And Pepper. Serves 2. Scale it up or down for the number of people at the table.
Ingredients
- Chicken
- 1 tbsp
- 4 tbsp
- 1 tsp
- Salt And Pepper
Method (preview)
- 1
Brown the chicken in butter and oil in a large, heavy skillet over moderate heat.
- 2
Add the garlic cloves, spices, and coriander (chopped fine).
- 3
Cook for about 10 minutes, turing the chicken pieces occasionally to distribute sauce evenly.
- 4
Stir in enough water to cover, about 1 cup, and simmer over low heat, adding more water if necessary until the chicken is tender.
- 5
Add olives and lemon and cook over somewhat lower heat for 8-10 more minutes, or until sauce is reduced.
- 6
Serve over rice or couscous.
- 7
I usually use boneless chicken instead of boney chicken pieces.
