• 1.0 tsp Salt Pepper To Taste
• 2.0 Tbl Salad Oil
• 1.0 Med Eggplant

Method (preview)

   Shape beef into thick patties; season with salt and pepper. Brown in hot oil. Slice eggplant into thick slices; season with salt and pepper. Coat with flour; brown in olive oil. Place cooked eggplant slices in shallow baking dish; top each with cooked meat patties. Cover with tomato sauce; sprinkle with oregano and Parmesan cheese. Top with cheddar cheese. Bake for 35 minutes at 300 degrees. Yield 4 servings.
