Mix all other ingredients with the egg yolks. Fill egg whites halves with mixture.

Scrub potatoes and cut into long strips about 1/2-inch thick. Drop fries into ice water and add 1 teaspoon sugar. Chill 2 hours.

Remove potatoes and dry thoroughly. Place potato strips and oil in plastic bag. Shake to coat potatoes with the oil.
