- 1
Cut the mangoes in half and remove the pit. Cut away the peel and coarsely chop the flesh.
- 2
Place the chopped mango in a blender or food processor; add the powdered sugar and blend until completely smooth.
- 3
Add the coconut milk and ice to the machine and blend again until frothy.
- 4
Pour into 4 tall glasses and sprinkle with shredded, toasted coconut.
- 5
Cook's tip: To add a special kick to the cocktail (though not perhaps, for breakfast) add a generous dash of white rum to the blender with the coconut milk.
- 6
Lower the heat, let the crust set and depending on thickness, chops should be done in well under 20 minutes.
- 7
Cream butter and sugar till light and fluffy.
- 8
Stir flour, cornstarch and baking powder together.
- 9
Mix into creamed mixture, mixing well.
- 10
Roll dough into small balls the size of large marbles and place on greased oven tray.
- 11
Flatten slightly with a fork. Bake at 350F. for 20 minutes or until done.
- 12
Cool and sandwich two cookies together with butter icing or raspberry jam.
- 13
Cream butter till light and fluffy. Add vanilla. Gradually beat in icing sugar, beating till smooth. Add sufficient water to give a spreading consistency.
- 14
Pour vegetable oil into a plastic bag. Add potato slices and shake to coat.
- 15
Remove chips and toss with salt or other seasonings. Let cool.
- 16
Notes: Can use parchment paper with no oil necessary.
- 17
Can brush each slice with oil rather than using plastic bag.
- 18
Each succeeding batch may take longer to cook, which might be due to extra steam buildup in microwave.
