  1. 1

Preheat the oven to 375F. Spray a rectangular, 4-quart glass baking pan.

  2. 2

In a large bowl, add the cherries, Splenda, extracts, lemon juice, cornstarch and 3/4 teaspoon cinnamon.

  3. 3

Stir well, so all of the cherries get coated.

  4. 4

Pour into the glass baking dish.

  5. 5

Rinse the bowl and wipe dry with a paper towel.

  6. 6

Add the cut up butter, flour, oats, brown sugar, remaining cinnamon and a pinch of salt.

  7. 7

Mix with your hands until crumbly.

  8. 8

If you need more flour then add some.

  9. 9

When the crumbles are clumping, spread over the top of the cherry mixture.

  10. 10

    Do not press down.

  11. 11

Bake for 35-40 minutes until the middle is bubbling.

  12. 12

Bake until a thermometer placed in the middle of the pan reads 180F.

  13. 13

The middle has to boil so the fruit thickens.

  14. 14

When it is boiling and bubbling, take it out and let stand for a few minutes.
