Italian Sausage (Medium Hot)

A home-style Italian Sausage (Medium Hot) made with Salt, Ice Cold Water, Fennel Seeds, Black Pepper, and Sugar. Serves 5. Scale it up or down for the number of people at the table.

• 1 cup
• 4 tsp
• 1 tsp
• 1 1/2 tsp
• 1 1/2 tsp
• 1/2 tsp
• 2 tbsp
• 2 tbsp
• 1 1/2 tsp
• 5 lb

Method (preview)

   Grind the spices and combine, using a coffee grinder to grind the spices and seeds.

   Mix all ingredients.

   Put into small hog casing.

   Bake in oven.

   Freeze for sauce or to cook on a hot grill.
