• 1.0 tbsp Grated Lemon Rind
• 0.25 tsp Salt

   LEMON FILLING: Combine in a 2 quart saucepan: the cornstarch and grated lemon rind with the salt. Gradually add the water and mix until smooth. Beat the 2 egg yolks (or 1 egg) and 1 cup sugar. Add to the lemon mixture. Cook over medium heat stirring constantly, until thick. Cool thoroughly.
