   Mace is the reddish-orange, lacy covering (called an aril) of a nutmeg seed and is usually ground into a powder, although it is sometimes available whole. Mace imparts a nutmeg-cinnamon flavor to poultry and fish dishes, pickles, cakes, custard, and puddings.
