Ingredients

• 1.0 tbsp Olive Oil
• 1.0 tbsp Olive Oil
• 2.0 tsp Red Wine Vinegar

Method (preview)

   Heat the olive oil in a small frying pan over a medium heat. Add the mackerel and fry for two minutes on each side, then remove from the pan and put onto a slice of griddled ciabatta.

   To make the rocket pesto, place all the ingredients into a food processor and blend until smooth.
