Madeira Cake, from English Food

Method (preview)

   Grated rind of half a large lemon

   Cream the butter and sugar together until the mixture is light and fluffy.

   Sift the flour and baking powder together.

   Beat the eggs into the butter and sugar, one at a time, adding a little flour if the mixture seems to be separating.

   Stir in the rest of the flour and the grated lemon rind.

   Bake for 1 1/2-2 hours at mark 4, 350F. After one hour place the two pieces of peel on top, and complete the baking.

   Serve with Madeira.
