New England Potato Salad with Sour Cream Dressing

A home-style New England Potato Salad with Sour Cream Dressing made with Potatoes Cooked, Celery Diced, Vinegar, Salt, and Eggs Hard Cooked Sieved. Serves 6. Scale it up or down for the number of people at the table.

• 5 tbsp

• 1 tsp
• 1 1/2 tbsp
• 1/4 clove
• 1
• 1/2 cup

Method (preview)

   Peel potatoes, cut into 1/2 inch cubes and chill.

   Add celery, 3 tbsps vinegar and salt.

   Fold eggs into sour cream, add remaining vinegar, pepper, mustard, garlic and onion.

   Place potato mixture in salad bowl, add dressing and toss well.

   Garnish with olives.
