  1. 1

Heat oven to 350 degrees F.

  2. 2

In large bowl, beat together butter and sugars with electric mixer until creamy. Add eggs and vanilla; beat well.

  3. 3

In medium bowl, combine flour, baking soda, cinnamon and salt; mix well.

  4. 4

Add to butter mixture; mix well. Stir in oatmeal and raisins; mix well.

  5. 5

Drop by rounded tablespoons onto ungreased cookie sheets.

  6. 6

Bake 10 to 12 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely.

  7. 7

To make sandwiches, have your ice cream only soft enough to cut out rounds from.

  8. 8

Lay two cookies flat sides up.

  9. 9

Cut a round of ice cream or frozen yogurt; place on one of the flat sides of one cookie.

  10. 10

Top flat side down on ice cream with other cookie.

  11. 11

    Wrap snugly with plastic wrap.

  12. 12

Put inside a gallon freezer bag with zipper close.

  13. 13

Repeat until you have all 2 dozen cookie sandwiches completed.

  14. 14

You had better put bag of sandwiches in freezer and pull out to add two sandwiches and back in freezer until you're done.

  15. 15

It will take more then 1 gallon freezer bag.

  16. 16

    Be sure to label bags.
