Potato Cake

Potato Cake is a home-style recipe made with Margarine, Sugar, Eggs, Mashed Potatoes, Vanilla Extract, and Flour. Serves 12.

• 1.0 cup Margarine
• 2.0 cup Sugar
• 2.0 Eggs
• 1.0 cup Mashed Potatoes

   cream butter and sugar until fluffy. add eggs one at a time beating well. Blend in potatoes and vanilla. Mix flour cocoa and baking soda and alternately add with milk blending well . Stir in nuts. Pour into a greased 13 x 9 x 2 inch baking pan. Bake at 350 for 40-45 minutes or until cake tests done. Cool on a wire rack.
