   I've seen deviled eggs with the yolks evenly centered. How do you hard-cook eggs so the yolk is centered when the eggs are cut in half?

   As an egg ages, the yolk moves more freely and can become displaced as the white thins out. Using fresh eggs will reduce the chance of having off-centered yolks.
