   One way to proof bread is the microwave. To do it, heat a measuring cup of water in the microwave to boiling point, then shut off the microwave and place the dough inside. The preheated water keeps the dough at a warm temp while it proofs in a moist and draft-free environment. This method works well regardless of the ambient humidity.
