   Heat oven to 350F. Lightly spray bottom only of 9 x 5-inch metal loaf pan with cooking spray. In medium bowl, combine oats and milk; mix well. Set aside.

   In large bowl, combine flour, sugar or sweetener, baking powder, pumpkin pie spice, baking soda and, if desired, salt; mix well.
