Method (preview)
- 1
Preheat BBQ to medium (approx. 350F).
- 2
Spray a 9" x 9" cake pan with cooking spray.
- 3
Squeeze the moisture from the spinach in a colander using a fork.
- 4
Sprinkle with spice.
- 5
Cut each breast in half.
- 6
Make a slice down the centre of each half, not cutting all the way through.
- 7
Place each piece, slit side up, in the palm of your hand.
- 8
Spoon a tiny bit of spinach on top.
- 9
Flip the piece, chicken side up, into the cake pan.
- 10
Repeat with all the chicken.
- 11
If some of the spinach falls out, or these don't look perfect, don't worry, this meal looks fantastic after it's baked.
- 12
Mix in a bowl in this order: soup, mayonnaise, garlic powder, celery salt and curry powder. Stir until smooth. Spoon over chicken.
- 13
In a different bowl, mix breadcrumbs, Parmesan, parsley and oil together.
- 14
Sprinkle over the chicken and sauce. Place pan on foil diffuser (see below) in preheated BBQ. Set timer for 35 minutes. Close lid.
- 15
Rinse broccoli under cold water in a colander.
- 16
Place in medium-size microwave-safe pot or casserole with lid.
- 17
Cover and microwave on high for 5 minutes.
- 18
When timer rings for chicken, turn BBQ to low, and leave it in.
- 19
Make couscous in a stove-top pot according to package directions. When the couscous is ready, so is the chicken.
- 20
Stir broccoli and microwave at high for 2 additional minutes just before serving.
- 21
How to make a foil diffuser - Fold a long piece of heavy foil in half, shiny side out.
- 22
Crumple the edges together on all sides.
- 23
Make sure the finished diffuser is larger than the bottom of the pan you are using.
- 24
BBQ as an oven, use a diffuser to deflect direct heat from the burners and prevent the food in the bottom of your pan from scorching.
