Separate large leaves from head of cabbage. Parboil just until tender and drain in a large colander.

Stir-fry onion and pepper in 1 tablespoon olive oil.
Remove from heat and add sour cream, 1/2 can of cheddar cheese soup, caraway seeds and well drained sauerkraut.
