Sage's fuzzy gray-green leaves are easy to spot among the fresh herbs; its strong, slightly musty flavor is easy to recognize in pork sausage and other meat, poultry, and cheese dishes. When dried, sage is usually ground and powdery. ground sage loses its flavor much more quickly than do the leaves.
