   This isn't exactly a recipe, but I raise goats and usually have 4 - 5 taken to the processor at one time. I try to get all the ground meat in a 'fine grind', not chili grind.

   I like to use a commercial mix called 'Rio's Rib Rub' on a lot of my heavy cuts of meat and find it works equally well in (pan) sausage too.
