In a large skillet heat oil over medium-high heat and cook shanks until golden brown on all sides, 5 to 7 minutes in all.
- 2
You may have to do this in batches.
- 3
As they brown, transfer to a plate.
- 4
Pour off all but about 1 T. of the oil.
- 5
Add the celery, carrots, and garlic and cook, stirring a few times, until softened, about 5 minutes.
- 6
Make a bed of the vegetables in the slow cooker and arrange the lamb on top.
- 7
Add beer to skillet and bring to a boil, scraping up any browned bits stuck to the pan.
- 8
Stir in tomato paste, chopped tomatoes with their liquid, herbs, salt, and pepper.
- 9
Bring to a boil, reduce heat to medium-low, and simmer for about 5 minutes.
- 10
Pour sauce over lamb.
- 11
Cover and cook on Low until the lamb is fork-tender, 7 to 8 hours.
- 12
Preheat the oven to 375F and bring a large pot of salted water to a boil for pasta.
- 13
With a slotted spoon or tongs, transfer shanks to a shallow baking dish and keep warm in the oven while you cook pasta and finish the sauce.
- 14
Strain the sauce, reserving the solids.
- 15
Remove as much fat as possible from the sauce, and pour it into a small saucepan.
- 16
Stir in carrots and celery and bring sauce to a boil.
- 17
Reduce the heat to medium-low, and simmer until the sauce thickens a bit, about 10 minutes.
- 18
Cook the pasta, drain, and arrange on a warm platter, topped with the tomato sauce.
- 19
Serve each diner pasta and sauce, topped with lamb.
- 20
Serve hearty eaters and entire lamb shank; for smaller appetites, remove the meat from the bone in large chunks.
