• 1.0 lb Sweet Potatoes
• 1.0 cup Flour
• 1.0 Egg
• 0.25 cup Butter

   Grate potatoes. Cover with boiling water and let stand 10 or 15 minutes. Drain.

   Combine potatoes, flour, egg, butter and salt. (If batter is too stiff, add a little warm water; if it is too wet, add more flour.) Drop by tablespoonfuls into hot oil and fry until nicely browned and cook through.
