Cook's notes: This chili is spicy, so you may wish to reduce the amount of jalapeno, chipotle and chili powder by half or so; you can always add a bit more to taste as the chili simmers.

Chipotle chiles (available in some supermarkets in the Mexican or imported foods section, or in ethnic food stores) provides a nice hint of smokiness as well as spicy heat to dishes.

If you can't find it, use mild or hot canned chilies and a few drops of Liquid Smoke to taste.
