   Vanilla is a familiar and popular flavor, used in many desserts, confections, baked goods, beverages, and some savory preparations. Vanilla beans are richer tasting than vanilla extract, although extract can nearly always be substituted in recipes calling for the beans. Pure vanilla extract is far more flavorful than imitation vanilla extract. Vanilla is the second most expensive spice after saffron.
