   If whipped cream becomes yellow & stiff it is past the point of no return for whipped cream, but it can be used for butter. Add a bit of salt to the cream.r

   If cream looks grainy & dry: It has almost turned, but it can still be saved. Beat in more cream until the desired stiff peak texture is restored.
