• 6.0 Large Unpeeled Potatoes
• 1.0 Small Diced Onion
• 1.0 cup Diced Celery
• 3.0 tbsp Fresh Chopped Dill Weed

   Combine the first 7 ingredients and blend well. Chill for several hours. Place the shredded lettuce on a serving platter and sprinkle with the olive oil. Spoon the potato salad over the lettuce evenly. Salt and pepper to taste. Makes 6 - 8 servings.
