Chestnut Ice Cream

• 8.0 Egg Yolks Room Temperature
• 1.0 cup Sugar
• 2.0 cup Half And Half
• 2.0 cup Whipping Cream

   For ice cream: Beat yolks and sugar in large bowl of electric mixer until pale yellow and slowly dissolving ribbon forms when beaters are lifted, about 6 minutes. Scald half and half and 1 cup whipping cream in heavy large saucepan. Add vanilla and gelatin and heat until gelatin dissolves. Slowly whisk hot liquid into yolks. Return to pan and stir over low heat until mixture thickens and leaves path on back of spoon when finger is drawn

   Transfer custard to ice cream maker and process according to manufacturer's instructions. Turn into plastic container and freeze 15 minutes.
