Jimmy's Pancakes

Ingredientes

• 2.0 cup All Purpose Flour
• 1.0 tbsp Baking Powder Mix
• 2.0 Eggs
• 2.0 tbsp Vegetable Oil

Preparo (prévia)

   In a blender or mixer (I like the blender), blend eggs, vegetable oil and vanilla. Add flour and baking powder; add milk. In blender, use the pulse to work the mixture down, scraping from sides with spatula as needed, till mix is wet. Then mix on high until everything is well-mixed. Pour onto a hot griddle or frying pan and cook until bubbling. Turn over and cook on the other side.

   Gertrude Says: My nephew, Jimmy Osmon, a retired policeman, was injured in the line of duty. After his injury and early retirement, he stayed home with his family, cooked, did housework, etc., while his wife worked. He created this recipe.
